Why Bourbon Vanilla?

The vanilla beans are sourced from the Bourbon Islands, where the climate and soil create the ideal conditions for cultivating the most exquisite vanilla. Madagascar vanilla makes up 80% of the world’s vanilla, but destruction of crops due to cyclones in 2017 increased prices by as much as 12x. It takes 4 years for a new vanilla plant to produce a vanilla bean that is ready for sale.
Reunion Island is now a French island. The kings of France from 1589 to 1789 and from 1815 to 1848 belonged to the “Bourbon Dynasty”. In 1642, in the name of King Louis XIII, the French took over the island and naturally named it “Bourbon Island."
Bourbon Vanilla refers to this Bourbon Island, but now generally refers to vanilla which can only be produced in these places: Madagascar, Reunion Island, Seychelles, Mauritius, Comoros.
Originally from Mexico, the Vanilla Plant was transplanted to Madagascar. Because the Melipona Bee that pollinate the flowers are not native to Madagascar, Bourbon Vanilla must be hand pollinated, over a very short pollinating season (October to January).
Our vanilla is made from these beans AND we use double the normal amount of beans to enhance the vanilla flavor of each cookie.
